What is the difference in a 325is and a 325ic?

"is" is the sport model. Sport suspension, some cosmetics, etc.

it has changed with the year

the c currently stands for coupe - where the s usually stands for sport

And from 95 (I think), they don't put the "s" there even if it is a sedan with sport package. Just like I have, '95 325i sport package.

A 1991 325ic would be a convertible wouldn't it? A 325is would be a coupe with sports package.

Nah, engine wise, the 325i, 325is, and 325ic are all the same.
